Chicken Taquitos

Last night, I decided to finally make Queso Blanco. I asked M if he wanted tacos for dinner, which is one of our regular meals. I then remembered that I had found a recipe for Chicken Taquitos and suggested it for something different. The process to make these was quite simple and they turned out to be delicious!

Preheat your oven to 425. You will need:

Chicken, Cream Cheese, Lime, Cumin, Onion Powder, Chili Powder, Garlic, Cilantro and Tortillas

Start by mixing together the cream cheese and salsa. Add in the lime juice, cumin, onion powder, chili powder, garlic (I used powder) and cilantro. Then throw in the chicken and cheese. You could probably just stop and eat this!

Filling

Then start the taquito assembly. I decided to put some queso blanco in them because you can never have enough cheese!

Put filling on one side of tortillaTightly roll the tortillas up and place on a baking sheet

Bake these for about 15 minutes, or until the cheese is melted and the tops are golden.

Serve the taquitos then fix them up with anything Mexican! I used sour cream and salsa…oh, and some queso blanco.

You could also throw some chips (…and queso blanco, duh) on your plate and call it a Sunday-night fiesta!
